Root Crops, such as yams and cassava, contain
cyanoglucosides, mainly linamarin, which normally are metabolized to release cyanide
radicals which are detoxified by the rhodanese enzymatic pathway or sulfur–containing
amino acids to produce the nontoxic thiocyanate. Both these pathways are slowed during
undernutritional states resulting in possible cyanide damage to pancreas and
diabetogenicity resulting. Vit B2, riboflavin protects against this development. |
